My Food Week

I thought I would share with you all the food I made this week.Hopefully you might get some ideas.

Monday
I made fajitas and my recipe for the spice mix can be found here.

Tuesday
Potato Wedges
Potatoes
Olive Oil
Rosemary

Preheat oven to 180
These take 30 minutes to cook and are divine!
Wash the potatoes and cut them into wedges. I leave the skins on but whatever your preference.
Cover in olive oil and rosemary. I sometimes add some chili for a kick.

We had these with paprika marinated burgers from the butchers, which I cooked in the oven.
I also made mushroom and sweetcorn soup but I can't remember the recipe! It was lovely though.


Wednesday
Salmon Pasta Bake
Pasta. Whatever shape you want. I used penne.
Salmon (or tuna).
Sweetcorn or whatever vegetables you like.
Philadelphia Light cream cheese. ~180g
200ml vegetable stock. I used Knorr. This gives it a great flavour.
Grated cheese

Sorry I don't have much quantities. I generally use whatever I can get my hands on! I made this for 2 people.

Cook the pasta.
While that's cooking. Melt the cream cheese in a saucepan with the vegetable stock.
Add the fish, vegetables and pasta.
Make sure it's all heated.
Put into an ovenproof dish/dishes.
Sprinkle with the cheese.
Place under the grill until golden.

Thursday
Mozzarella Meatballs in Marinara Sauce with Tagliatelle

Cook the tagliatelle.


Marinara Sauce
1 can of tomatoes + a little sugar

Tomato pasta
2 crushed garlic cloves
2/3 tablespoons of mixed herbs (basil, oregano, rosemary thyme etc)
Salt + pepper
Olive oil
 
I cooked the garlic gloves in the olive oil first.
The I added the tomatoes, sugar and tomato paste.
I let this cook for a while and then I added the mixed herbs and salt + pepper.

Mozzarella Meatballs
500g minced meat
50g breadcrumbs
2 crushed garlic cloves
1 tsp salt
1/2 tsp black pepper
1 tsp parsley
1 tsp oregano
3 tbsp rapeseed oil
75g Mozzarella

Mixed the minced meat and breadcrumbs together first.
Add in the garlic, salt, black pepper, parsley, oregano and rapeseed oil.
Make the mixture into meatballs.
Fry meatballs until they are cooked.
Add them to the marinara sauce and let simmer for about 25 mins.

Put the meatballs and sauce mixture into an ovenproof dish.
Top with the mozzarella and grill until melted.
All done!

It's actually a really easy recipe, it's just because it's long it looks complicated!
You could probably just used a tomato based sauce from a jar if you want but the meatballs are quick and easy to make.
